Saffron Risotto

A Timeless Italian Classic Enhanced by the Elegance of Saffron

Ingredients

300 g Arborio or Carnaroli rice

1 liter hot chicken or vegetable stock

1 small onion, finely chopped

2 tablespoons butter

2 tablespoons extra virgin olive oil

100 ml dry white wine (optional)

60 g freshly grated Parmesan cheese

1 teaspoon

2 tablespoons hot water

Salt

Freshly ground black pepper

Preparation

1. Infuse the Saffron

Place the KocaeliSafran saffron threads in a small bowl with hot water and allow them to infuse for approximately 10 minutes. This process releases the saffron's natural color, aroma, and delicate flavor.

2. Prepare the Base

Heat the butter and olive oil in a large saucepan over medium heat. Add the finely chopped onion and cook gently until soft and translucent.

3. Toast the Rice

Add the Arborio or Carnaroli rice and stir continuously for 2–3 minutes until the grains are lightly coated and glossy. This step helps create the signature creamy texture of a perfect risotto.

4. Build the Flavor

If using, pour in the white wine and allow it to evaporate completely. Gradually add the hot stock, one ladle at a time, stirring constantly. Wait until each addition is fully absorbed before adding the next. Continue this process for approximately 18–20 minutes.

5. Add the Golden Touch

When the rice reaches an al dente texture, stir in the infused saffron along with its soaking liquid. The risotto will develop its beautiful golden color and elegant aroma.

6. Finish with Creaminess

Remove the pan from the heat and stir in the remaining butter and freshly grated Parmesan cheese. Season with salt and freshly ground black pepper to taste.

Zerde Dessert

Why is Zerde served at weddings and celebrations?

Because for centuries it meant yellow joy — while saffron symbolized wealth.

Ottoman palace kitchens turned zerde into one of their signature rice desserts. Records from the 1500s show it on palace tables, including circumcision celebrations for Sultan Suleiman the Magnificent and his sons Bayezid and Cihangir. Outside the palace, the combination of rice (pilaf) and zerde became the defining menu of Anatolian wedding feasts.

Ingredients

3/4 cup (150 g) short-grain rice (baldo or arborio)

7 cups (1.65 L) water

250 g sugar

1 teaspoon KocaeliSafran saffron

1/2 teaspoon ground turmeric (optional)

3 tablespoons rice flour or cornstarch

1 tablespoon rose water (optional)

2 tablespoons pine nuts, 2 tablespoons dried currants, half a pomegranate seeds, and ground cinnamon for garnish

Preparation

1. Prepare the Saffron

Soak the threads in 1/4 cup of hot

2. Cook the Rice

Rinse the rice until the water runs clear. Boil 6 1/2 cups of water, add the rice, and cook uncovered for 20–25 minutes until the grains are completely soft.

3. Sweeten It

Stir in the sugar and let it dissolve over medium heat for about 5 minutes.

4. Thicken the Flavor

Whisk the rice flour (or cornstarch) into 1/2 cup of cold water until smooth, then slowly pour it into the pot while stirring constantly. Cook for 8–10 minutes, stirring, until the pudding coats the back of a spoon.

5. Golden Touch of Saffron

Add the saffron water with the strands, and turmeric if using. Boil for 2–3 minutes — the pot will change from a pale straw color to a deep golden. Turn off the heat and stir in the rose water.

6. Final Touch

Serve and chill.

Pour the hot pudding into 8 individual bowls or glass cups. Let it cool to room temperature, then refrigerate for about 3 hours until it sets softly.
